  1. 1 Pappadums - quartered

  2. (flavored with garlic - if possible)

  3. Peanut oil

  4. Spicy Lentil Dip

  5. 3 cups 711ml Cooked lentils

  6. 1/2 cup 31g / 1.1oz Coarsely-chopped red onion

  7. 4 Garlic cloves - coarsely chopped

  8. 1 Serrano pepper - coarsely chopped

  9. 2 tablespoons 30ml White wine vinegar

  10. 2 tablespoons 30ml Olive oil

  11. 1/4 teaspoon 1 1/3ml Cumin

  12. Salt - to taste

  13. Freshly-ground black pepper - to taste

  14. 1/4 cup 4g / 0.1oz Coarsely-chopped cilantro

  1. Preheat grill.

  2. Brush each pappadums quarter with oil on both sides.

  3. Grill on each side until blistered, about 10 to 12 seconds on each side.

  4. Spicy Lentil Dip: Place lentils, onion, garlic, pepper and vinegar in the bowl of a food processor. Process until smooth. Slowly add the olive oil.

  5. Season with cumin, salt and pepper and pulse 3 times. Remove to a bowl and Garnish with cilantro.
