  1. Citrus and Banana Meringues

  2. Serves 4 3 egg yolks

  3. 3 1/2 Tbsp caster sugar

  4. 3 tsp cornflour

  5. 300ml fruit juice

  6. 1 Tbsp rind or zest of lemon, orange, mandarin, and/or tangelo Beat egg yolks with

  7. 1 1/2 Tbsp caster sugar, until smooth, then

  8. mix in cornflour.

  9. In a separate saucepan, heat fruit juice, rind of citrus and 2 Tbsp

  10. caster sugar. Once at boiling point, add to egg yolk mixture. When

  11. thickened, add back into juice pan and simmer to ensure cornflour

  12. is cooked. Stir constantly. Allow to cool and cover with cling

  13. wrap.

  14. Meringue Mixture

  15. 3 egg whites

  16. 1/2 tsp cream of tartar

  17. 3 Tbsp caster sugar

  18. 1 tsp cornflour

  19. Whisk egg whites and cream of tartar, until peaks form. Then add

  20. 1 tsp caster sugar and cornflour and continue whisking.

  21. Add the rest of the sugar, little by little, and whisk until you

  22. have a smooth, glossy mixture.

  23. Spoon out circles on a non stick tray and cook for a couple of

  24. hours at

  25. 110C.

  26. To serve 2 Tbsp thick cream (King Island)

  27. 50g almond slivers

  28. 4 bananas

  29. Once the citrus filling has cooled, add cream and almond slivers,

  30. spoon some over meringue with a few slices of banana and sprinkle

  31. with icing sugar and more citrus rind.
