  1. 1 tablespoon 15ml Sweet butter

  2. 1 tablespoon 15ml Papaya - peeled, seeded, (large)

  3. And cut 1/2" dice

  4. 1 Fresh pineapple - peeled, and Cut 1/2" dice

  5. 2 Oranges - peel, pith removed,

  6. 1 Lemon - peel, pith removed,

  7. And sections removed from membranes

  8. 1 Fresh berries, preferably black berries

  9. 1 tablespoon 15ml Sugar

  10. 1/4 cup 59ml Orange juice

  11. 1 Banana Galettes - seeNote

  12. 1 Fruit frozen yogurt, preferably banana or Berry flavored

  13. Mint sprigs - for garnish

  1. * Note: Packaged dried thinly-sliced bananas available in Asian specialty stores.

  2. In a saute pan melt butter over moderate heat and cook until golden brown. Add the papaya, pineapple, oranges, lemon, berries, sugar, and orange juice, stirring to combine, and cooking until liquid is reduced to a syrup. Transfer fruit to a bowl. Roll banana galettes into cones and secure with a toothpick or skewer. Scoop frozen yogurt into banana galettes and top with fruit. Garnish with mint. Serve immediately.

  3. This recipe yields 4 to 6 servings.
