  1. 1 corned beef brisket of approximately

  2. 3lb (cut into cubes)

  3. 6 potatoes (medium sized, peeled and cut into bite sized pieces)

  4. 2 stems of celery, finely chopped

  5. 1 cup green peas

  6. 2 carrots, cut into juliennes

  7. 1 cabbage

  8. 1 tsp pepper

  9. 3-4 cloves of garlic, finely chopped

  10. Water as required (approximately 2 cups)

  1. Directions Grease the crockpot with butter. Add in a layer of potatoes and then a layer of carrots. Add the green peas. Now add the corned beef and pepper. Add the celery. Cabbage is best cut into 10-12 big pieces and placed around the corned beef. Sprinkle the chopped garlic on the meat all over. Pour the water and cover. Cook on low for approximately 5-6 hours. Open stir once. Cover and cook for another hour or till the corned beef is well done. Take out , cut into slices and serve with a large helping of the vegetables. Garlic bread would go perfectly with this delicious corned beef.
