  1. 2 cups thinly sliced onions

  2. 2 tablespoons chopped garlic

  3. 2 tablespoons olive oil

  4. 1 teaspoon ground cinnamon

  5. 1/2 teaspoon ground coriander

  6. 1/2 teaspoon ground ginger

  7. 1 pound boneless skinless chicken breast, cut into strips

  8. 2 (15-ounce) cans red or pinto beans, rinsed and drained

  9. 1 cup reduced-sodium fat-free chicken broth

  10. 1/4 cup orange juice Grated rind of half an orange or lemon

  11. 1/2 cup chopped parsley

  12. 1 teaspoon salt

  13. 1/4 teaspoon cayenne pepper

  1. Cook onions and garlic in oil in large skillet over low heat, covered, until very tender, about 15 minutes. Stir in spices and cook 1 minute longer. Increase heat to medium. Add chicken and cook until browned, about 10 minutes. Stir in remaining ingredients and heat to boiling. Reduce heat and simmer, covered, until chicken is tender, about 5 minutes.
