  2. SWEDISH POTATO PANCAKES

  7. 2 c Milk

  8. 2 Eggs, beaten

  9. 1/2 c Flour

  10. 1 t Sugar

  11. 1 t Salt

  12. Freshly ground black pepper

  13. 1 1/3 c Potatoes, grated

  14. 2 c Lingonberries

  15. Add 1/4 cup milk to eggs. Blend in flour. Add

  16. remaining milk, sugar, salt, and pepper. Beat until

  17. smooth. Let stand 2 hours.

  18. Squeeze grated potatoes dry and add to batter.

  19. Heat griddle and grease lightly. Use 1/4 cup batter

  20. for each pancake.

  21. Fold pancakes in quarters. Serve with lingonberries.

  22. 14 to 16 pancakes.
