  1. 3 lbs 1362g / 48oz Skinnless chicken parts - cut up

  2. 1 Diced tomatoes - (15 oz)

  3. 1 Onion - sliced (medium)

  4. 10 Bacon - divided

  5. 1 Tomato paste - (6 oz)

  6. 1 Mushrooms (or use fresh sliced mushrooms)

  1. Recipe Instructions Spray sides of crockpot with non-stick spray. Place washed, skinned chicken parts in bottom of crockpot. Scatter onion slices on top. Lay 5 slices of bacon on top of chicken and onions. Add can of diced tomatoes (with juice). Cook on HIGH for 1 hour then switch to LOW for 2 hours. Add the can of tomato paste and the mushrooms. Cook on LOW for about 1 more hour. (Some crocks tend to cook a bit fast on low, so you may need to adjust times). Meanwhile, (optional) cook then crumble the remaining 5 slices of bacon. When serving, sprinkle the crumbled bacon over top of chicken. Serve over rice. This recipe yields ?? servings.
