  5. 3/4 c Shortening

  6. 1 1/2 c Sugar

  7. 2 1/4 c Cake flour; sifted

  8. 1 tb Baking powder

  9. 3/4 ts Salt

  10. 1 c Milk

  11. 1 1/2 ts Vanilla extract

  12. 5 Egg whites

  15. Cream shortening; gradually add sugar, beating well at

  16. medium speed of an electric mixer. Combine flour, baking

  17. powder, and salt; add to creamed mixture alternately with

  18. milk, beginning and ending with flour mixture. Mix after

  19. each addition. Stir in vanilla. Beat egg whites until stiff

  20. peaks form. Gently fold into batter. Pour batter into 2

  21. 9-inch round cakepans. Bake at

  22. 25 to 30 minutes or until a wooden pick

  23. inserted in center comes out clean. Cool in pans 10

  24. minutes; remove from pans, and let cool completely on wire

  25. racks. Frost as desired. Yield: one 2-layer cake.

  26. WHITE CUPCAKES: Spoon batter into paper-lined muffin pans,

  27. filling each cup two-thirds full. Bake at 350 degrees for 20 minutes. Remove from pans, and let cool on wire racks.

  28. Frost as desired. Yield: 26 cupcakes. --
