  1. Ginger Cream:

  2. 1 cup (8 ounces) cream cheese, softened

  3. 1 tablespoon minced crystallized ginger

  4. 2 tablespoons orange juice

  5. Peaches:

  6. 4 large ripe peaches, peeled and quartered

  7. 1/3 cup melted butter

  8. 2 tablespoons packed light brown sugar

  1. Prepare Ginger Cream: In a small bowl, beat together the cream cheese, brown sugar, crystallized ginger and orange juice on medium speed of an electric hand mixer until well blended. Cover and chill until ready to serve.

  2. Prepare Peaches: Prepare outdoor grill with coals 5 inches from heat source. Thread peach wedges on 4 wooden skewers, leaving a little space between each piece for even cooking.

  3. In a small bowl, stir together the melted butter and brown sugar. Brush peaches liberally with butter mixture. Arrange skewers on a lightly oiled grill rack, grill for about 6 to 8 minutes, turning once and brushing several times with the butter mixture, until peaches are hot and glazed. Serve hot with ginger cream.
