  2. 1 1/2 cups rice

  3. 3 1/2 quarts water

  4. 3 1/2 teaspoons salt

  5. 6 to 8 apples

  6. 2 tablespoons sugar

  7. 1 teaspoon cinnamon

  1. Cook the rice in boiling salted water. Drain and dry.

  2. Wash, core, and pare the apples.

  3. Wring out small pudding cloths, or squares of cheese cloth, in hot water.

  4. Spread the rice 1/3 inch over the cloth and place apples in the center with one teaspoon of sugar mixed with one-sixth teaspoon of cinnamon in the center.

  5. Draw up the cloth around the fruit until it is covered with rice.

  6. Tie in the apples, being careful not to have the rice and cloth in folds, and steam until fruit is tender, 1/2 3/4 of an hour.

  7. Serve with lemon sauce or cream. .
