  1. 3 cup(s) (1/2 pound) fresh chanterelle mushrooms

  2. 1 1/2 tablespoon(s) unsalted butter

  3. 1 tablespoon(s) finely minced shallot

  4. 1/4 teaspoon(s) ground black pepper

  5. 1/4 teaspoon(s) salt

  6. 1 tablespoon(s) chopped fresh chives

  1. Using a soft brush, gently remove any dirt from the chanterelles without washing the mushrooms.

  2. In a large heavy skillet, melt the butter over medium heat; add shallot and cook 1 minute. Add mushrooms and sauté until they are lightly browned but are still firm -- 3 to 5 minutes. Stir in pepper and salt.

  3. Transfer mushrooms to a platter. Sprinkle with chives and serve.
