  1. 1 lb 454g / 16oz Veal cutlets - sliced thin

  2. 1/2 teaspoon 2 1/2ml Salt

  3. 1/4 teaspoon 1 1/3ml Pepper

  4. 3/4 teaspoon 3.8ml Curry powder

  5. 3 tablespoons 45ml Vegetable oil

  6. 2 Onions - diced

  7. 2 tablespoons 30ml Evaporated milk

  8. 2 tablespoons 30ml Tomato paste

  9. 1 Lemon - juiced

  10. 10 Parsley sprigs - chopped

  11. 2 tablespoons 30ml Cognac or brandy

  1. Season veal with salt, pepper and 1/2 t curry powder. Heat oil; brown veal slices on both sides. Remove meat and reserve. Add onions; saute until softened.

  2. Add evaporated milk and tomato paste. Cook until bubbly. Add lemon juice, rest of curry powder, and chopped parsley sprigs. Return veal slices to the sauce. Add the cognac or brandy; heat through. Serve on preheated platter.
