  1. 1 small apple , grated

  2. 1 tbsp chopped mint

  3. 1/2 bulbs fennel , chopped handfuls radishes , chopped

  4. 1 small courgette , chopped handfuls spinach

  5. 1 tbsp olive oil

  6. 1 Barnsley lamb chop

  1. Method 1. For the relish: mix all of the relish ingredients together and season with salt.

  2. For the vegetables: heat the olive oil in a frying pan over a medium heat. Add the fennel and fry for 1 minute then add the radishes and fry for a further minute. Add the courgettes and cook for 2-3 minutes or until the vegetables are lightly golden in places then stir in the spinach and cook until just wilted. Keep warm.

  3. For the lamb: heat the olive oil in a frying pan over a medium-high heat. Add the lamb steak and cook for 3-4 minutes on each side. Using a pair of tongs hold the lamb chop upright and brown the thick layer of fat that runs along the side for the last minute or so. Set aside to rest for 2-3 minutes.

  4. Spoon the vegetables onto a serving plate, top with the lamb chop followed by a spoonful of apple and mint relish and serve.
