  2. Italian loaves (each about 7 inches long)

  3. 1/ 4 cup bottled clear Italian salad dressing

  4. 1 small onion, thinly sliced

  5. 1 small zucchini, halved lengthwise and sliced

  6. 1 small green sweet pepper, cut into thin strips

  7. 2 cloves garlic, minced

  8. 1 large tomato, seeded and chopped

  9. 3 cups shredded provolone or mozzarella cheese (12 ounces)

  10. 1/4 cup grated Parmesan cheese

  1. Method :

  2. Preheat broiler. Split bread loaves in half horizontally. Place halves on large baking sheet, cut sides up.

  3. In a 10-inch skillet heat salad dressing. Add onion zucchini, sweet pepper, and garlic. Cook and stir for 3 to 5 minutes or until vegetables are crisp-tender. Stir in tomato.

  4. Sprinkle half of the provolone or mozzarella cheese on bottoms of bread halves.

  5. Spoon vegetable mixture over cheese; sprinkle With remaining provolone or mozzarella and the Parmesan cheese.

  6. Broil 4 to 5 inches from the heat about 2 minutes or until cheese melts. Serve immediately.
