  1. 1 tablespoon peanut oil

  2. 1 onion, sliced thinly

  3. 1-2 teaspoons grated ginger

  4. 2 cloves garlic, chopped

  5. 1 teaspoon ground cumin

  6. 1 teaspoon ground coriander

  7. 1/2 teaspoon chilli powder

  8. 1/2 teaspoon turmeric

  9. 1 teaspoon salt

  10. 1/2 one small cauliflower, cut into small florets

  11. 3 tomatoes, coarsely chopped

  12. 2 tablespoons water

  13. 1 teaspoon garam marsala

  14. coriander, for garnish

  1. Heat wok. When wok is smoking add oil. Stir-fry onion, ginger and garlic until just tender.

  2. Add spices, stir-fry about 1 minute or until spices are fragrant.

  3. Add salt, cauliflower, tomatoes and water. Cook, stirring occasionally, covering if necessary, until cauliflower is tender, about 10 minutes.

  4. Stir in garam marsala. Serve with raita and steamed basmati rice.
