  1. 1/2 cup 118ml Lime juice - lemon juice - or combination

  2. 1/4 cup 59ml Vegetable oil

  3. 1/2 teaspoon 2 1/2ml Salt

  4. 1 Garlic - mashed

  5. 1/2 teaspoon 2 1/2ml Black pepper

  6. 1/2 teaspoon 2 1/2ml Thyme leaves

  7. 1 teaspoon 5ml Worcestershire sauce

  8. 2 tablespoons 30ml Onion - finely chopped

  1. Mix all ingredients and let set for 2 hours to allow flavors to blend -- BEFORE adding meat.

  2. If using injector -- puree all ingredients first.

  3. Yield: 3/4 cup
