  1. 2 1/2 cups flour

  2. 1 1/2 cups sugar

  3. 1/2 cup quick-cooking oats (not instant)

  4. 1 Tbsp. baking powder

  5. 1 tsp. salt

  6. 1 tsp. cinnamon

  7. 4 eggs, lightly beaten

  8. 2 cups peeled and chopped apples

  9. 3/4 cups canola oil

  10. 1/2 cups raisins

  1. Preheat oven to 400F. Grease and flour muffin cups, or line with paper liners.

  2. In large bowl mix all dry ingredients (flour through cinnamon).

  3. In a medium bowl, mix eggs, oil, apples, and raisins.

  4. Mix wet and dry ingredients together.

  5. Fill 24 muffin cups. Bake for 25 minutes. Cool on baking racks.
