  1. 2 cups mashed sweet potatoes

  2. 3 tablespoons butter, melted

  3. 2 eggs, beaten

  4. 3/4 cup white sugar

  5. 3/4 cup milk

  6. 1/2 teaspoon ground nutmeg

  7. 1 teaspoon vanilla extract

  8. 2 tablespoons lemon juice

  9. 1/2 cup light whipping cream

  10. 1 (9 inch) unbaked pie crust

  1. Preheat oven to 375 degrees F (190 degrees C). Combine the potatoes and melted butter in a mixing bowl. Stir the eggs, sugar, milk, nutmeg, vanilla, lemon juice, and light whipping cream into the potato mixture. Beat until well blended and smooth; pour into the pie shell. Bake in preheated oven for 50 to 60 minutes, until toothpick inserted in center comes out clean. Serve warm or cold.
