  1. 1 T butter or margarine

  2. 2 pounds long-grained raw rice

  3. 10 cups hot tap water

  4. 5 tsp. salt Rub interior of pot (bottom and sides) with butter. Pace rice,

  5. water and salt into pot. Cover.

  6. 5 for 2 hours,

  7. or until all of water is absorbed. Stir after 1 hour. Keep warm

  8. #2. Makes 10 cups.

  9. Note: For smaller amounts of rice, follow package directions for amount of water to add. One pound of rice will take about 1 1/2

  10. #5. Use leftover rice for casseroles

  11. and puddings.
