  3. 8oz Bacon, Diced

  4. 1/4 cup bacon fat

  5. 3 Stalks of Leeks, using only whites and light green parts. cut 1/2 through and sliced.

  6. 1/2 cup grated Parmesan cheese S&P TT

  7. 8oz small curd cottage cheese

  8. 2 cups dry breadcrumbs

  1. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil, add pasta, and cook until done; drain. Cook bacon in saute pan, draining bacon fat as necessary to get a nice crunchy bacon. reseve fat for topping, Deglaze pan with 1/8 cup water..get up all the crunchy bits on the bottom and place in 9×13 pan with bacon In 9×13 inch baking dish, stir together macaroni, shredded cheddar cheese, bacon, leeks, cottage cheese, sour cream, parmesan cheese, salt and pepper. In a small bowl, mix together bread crumbs and bacon fat. Sprinkle topping over macaroni mixture Bake 30 to 35 minutes, or until top is golden
