  1. 1 jar good quality tomato and herb pasta sauce

  2. 1 courgette, sliced

  3. 4 skinless chicken breasts

  4. 1 red pepper deseeded and chopped

  5. 1tbsp olive oil

  6. 200g cherry tomatoes

  7. 100g mature European cheese, grated

  1. Set the oven at 180ºC/160ºC fan oven/gas 4.

  2. Pour the pasta sauce into a baking dish, add the courgette and red peppers and place the chicken breasts on top. Drizzle with a little olive oil and bake for 25 mins until the chicken is almost cooked.

  3. Add the cherry tomatoes to the dish and sprinkle the cheese over the chicken. Return to the oven for a further 6 to 8 mins until the cheese has melted and the tomatoes are cooked. Serve with cooked pasta.
