    1. 6 large (about 3 pounds) sweet potatoes, peeled and quartered

    2. 1/2 cup orange juice, warmed

    3. 2 tablespoons packed light brown sugar

    4. 2 tablespoons butter

    5. 1 teaspoon grated orange peel

    6. 1 teaspoon ground ginger

    7. 1/2 teaspoon salt

    1. In heavy 4-quart saucepan, combine sweet potatoes and water to cover. Bring to a boil over high heat; cover, reduce heat to low and cook until potatoes are tender, about 20 minutes. Drain potatoes very well, reserving about 1/4 cup of cooking liquid. Return potatoes to saucepan.

    2. With an electric mixer at low speed, beat potatoes until they are broken up. Gradually beat in orange juice, brown sugar, butter, orange peel, ginger and salt, and continue beating until potatoes are fluffy. If necessary, add a little of reserved cooking liquid to reach desired consistency. Spoon into a serving bowl and serve immediately.
