  1. 2 teaspoons olive oil

  2. 1 medium onion , diced

  3. 2 garlic cloves, minced

  4. 2 pounds spinach , cleaned, chopped

  5. 1/2 cup milk

  6. 6 oz. cream cheese

  7. 3 dashes of Worcestershire sauce

  8. 3 dashes of hot sauce

  9. 3/4 cup shredded mozzarella cheese Coarse salt and pepper Breadsticks, cracker s, etc for serving

  1. Preheat oven to 425 degrees. In a pot with a tight fitting lid, warm up oil. Add onion and garlic; cook until lightly browned. Add spinach in two sections, letting the first wilt and then proceeding with the second. Transfer to a colander; drain, pressing to release all excess liquid. In the same pot, warm milk over high heat. Wisk in cream cheese until melted. Add spinach, Worcestershire sauce, hot sauce, and ¼ cup of mozzarella; stir to combine. Season with salt and pepper. Pour into baking dish (lightly oiled); sprinkle with remaining mozzarella cheese. Bake until bubbly and golden brown. Serve hot.
