  1. Sopa de Tortillas

  2. 4 8 tortillas

  3. 2 Tbsp olive oil

  4. 1 clove of garlic

  5. 1 cup tomato puree

  6. 1 onion, chopped

  7. 1 Tbsp freshly chopped parsley

  8. 1 tsp chili powder

  9. 1 bay leaf

  10. 2 cups water

  11. 1 1/2 Tbsp grated cheese

  12. Cut tortillas in narrow strips with scissors and set aside to dry.

  13. Heat oil in casserole. Cook garlic clove in oil until burned black

  14. and remove. Brown tortilla strips in oil and add tomato puree,

  15. onion, parsley, chili powder, bay leaf, and 2 cups water. Simmer

  16. for about 15 minutes or until tortilla strips are soft and soup is

  17. almost dry. Sprinkle grated cheese on top.
