  1. 6 slices bacon

  2. 336 g cornbread stuffing mix

  3. 1/2 cup melted butter

  4. 3 large eggs, beaten to blend

  5. 1 1/2 cups chicken broth

  6. 3/4 cup chopped onion

  7. 3/4 cup chopped celery

  8. 1/4 tsp. poultry seasoning

  1. Preheat oven to 350 degrees. Grease the inside of 12 muffin cups. Place the bacon in a medium skillet over medium high heat and cook until crisp. Drain bacon on paper towels. Stir together the cornbread stuffing, butter, eggs, broth, celery, onion and poultry seasoning in a large bowl. Crumble the cooked bacon into the stuffing mixture and stir to incorporate. Divide the stuffing mixture between the prepared muffin cups and bake about 30 to 35 minutes until set. Unmold the muffins and serve.
