  2. 3/4 lb black-eyed peas or navy beans (2 cups)

  3. 2 14 1/2 oz cans chicken broth

  4. 1 1/2 cups water

  5. 6 oz ham -- cut into 1" cubes

  6. 4 medium carrots -- sliced

  7. 1/2" thick

  8. 2 stalks celery -- sliced

  9. 1/4 cup dried minced onion

  10. 1 teaspoon sage -- crushed

  11. 1 teaspoon thyme -- crushed

  12. 1/4 teaspoon ground red pepper

  13. 1 tablespoon lemon juice

  1. In a 3-quart saucepan. bring 4 c. water and black-eyed peas or navy beans to boiling. Boil, uncovered, 10 minutes. Drain and rinse. In a 4-quart crockpot, combine broth 1 1/2 cups water, ham, carrots, celery, onion, sage, thyme and red pepper. Stir in drained peas or beans. Cover, cook on low for 11-12 hours or on high for 4 1/2-5 1/2 hours. Stir in lemon juice.
