  7. 1 cup sugar

  8. 1 2/3 cups extra strong coffee -- at room temperature

  9. 2 tablespoons cornstarch

  10. 2 tablespoons unsalted butter

  11. 1/3 teaspoon salt

  12. Note: If you would like to serve this sauce chilled, omit butter and refrigerat

  13. e after sauce has thickened.

  14. In a heavy skillet, melt the sugar slowly, stirring often, until the sugar is a

  15. 5 minutes. Slowly add

  16. 1 1/3 cups of the coffee, stir

  17. ring constantly. Be prepared for a lot of steam.

  18. In a small bowl, blend the cornstarch and the remaining 1/3 cup of coffee until

  19. smooth. Stir the mixture into the hot coffee-sugar mixture. Continue cooking

  20. 8 to 10 minut

  21. es. Remove from heat and stir in the butter and salt until blended. Serve war
