  1. Banana Bread

  2. 1/2 cup shortening

  3. 1 cup sugar

  4. 3/4 cup mashed very ripe banana

  5. 1 tsp. vanilla

  6. 1 1/4 cup sifted flour

  7. 3/4 tsp. baking soda

  8. 1/2 tsp. salt

  9. Cream shortening and sugar until fluffy. Add eggs, one at a time,

  10. beating well after each addition. Stir in banana and vanilla. Sift

  11. dry ingredients together and add to banana mixture. Mix well. Pour

  12. 9x9x2-inch pan. Bake at

  13. 350F for 30 to 35 minutes.

  14. Note: 1/2 cup chopped nuts can be added if desired.

  15. Grandma's Banana Cake

  16. 2/3 cup shortening

  17. 2 1/2 cups sifted cake flour

  18. 1 2/3 cups sugar

  19. 1 1/4 tsp. baking powder

  20. 1 tsp. baking soda

  21. 1 tsp salt

  22. 1 1/4 cups mashed fully ripe bananas

  23. 2/3 cups buttermilk (divided)

  24. 2 eggs

  25. 2/3 cup chopped walnuts (opt.)

  26. Place shortening in mixing bowl. Sift in dry ingredients. Add bananas

  27. 1/3 cup of the buttermilk. Mix until moistened; beat

  28. 2 minutes at

  29. 1/3 cup of buttermilk and the eggs. Best

  30. 2 more

  31. minutes. Fold in chopped walnuts. Bake in 2 greased and lightly floured

  32. 9-inch cake pans at

  33. 350F for about 35 minutes. Cool

  34. 10 minutes in pans,
