  1. 1/2c Onion, chopped

  2. 1 ea Garlic, clove

  3. 1 tb Margarine

  4. 2 tb Cornstarch

  5. 13 3/4oz Chicken broth, (College Inn)

  6. 1/4ts Basil leaves, dried

  7. 1/2c Cheese, mozzarella, shredded

  8. 1 1/2c Chicken, cooked, strips

  9. 4 oz Spinach, fresh, chopped

  10. 1 c Tomatoes, cherry, halved

  11. 1 x Pasta

  1. + In large skillet, over medium heat, cook onion and garlic in margarine until tender, about 5 minutes.

  2. Stir in cornstarch; mix in broth and basil.

  3. Cook and stir until mixture boils and thickens; stir in cheese until melted.

  4. Add chicken, spinach and tomatoes; cover and cook 1 minute or until heated through.

  5. Serve over hot cooked pasta if desired.
