  2. · 1/2 cup unsalted butter, softened

  3. · dash of lemon juice

  4. · 2 shallots, finely chopped

  5. · salt and black pepper, to taste

  8. COMBINE all ingredients well.

  9. SERVE at room temperature or chill and slice. Place on the hot food and allow it to melt and blend in.

  10. Flavored butter makes a rich  sauce for simple barbecued food. Serve a slice or two on top of chops, steaks or fish to melt and combine with the hot juices.

  11. Timing & Preparation

  12. · For a pouring sauce, warm the flavored butter over the barbecue just before serving.

  13. 1 week in the refrigerator, and up to

  14. 2 months in the freezer. Simply shape into a roll and freeze in plastic wrap.
