  1. 1 pound pork tenderloin

  2. 1 (3-ounce) package pork-flavored Oriental noodles

  3. 2 teaspoons vegetable oil

  4. 1/2 teaspoon red pepper flakes

  5. 1 teaspoon grated fresh ginger root

  6. 1/4 cup peanut butter

  7. 2 tablespoons soy sauce

  8. 2 cups torn spinach, washed and drained

  9. 1/4 cup sliced green onions

  1. Cut tenderloin into 1/4-inch slices, cut each slice in half.

  2. Cook noodles as directed on package; drain, reserving cooking water, and keep warm.

  3. Heat oil in a heavy skillet over high heat; add pork, red pepper flakes and ginger. Cook and stir until pork is done, about 4 to 5 minutes. Remove pork and keep warm.

  4. Blend peanut butter, 1/2 cup reserved cooking water and soy sauce; heat and stir until hot, adding more cooking water, if needed.

  5. Toss cooked pork, noodles, spinach and green onions with peanut sauce.
