  2. BARLEY CASSEROLE

  6. 4 tb Butter

  7. 2 md Onions, chopped

  8. 1/2 lb Mushrooms, sliced

  9. 1 1/2 c Pearl barley

  10. 3 c Chicken or beef broth

  11. 1/4 ts Salt

  12. 1/4 ts Pepper

  13. Garnish: chopped parsley

  14. Preheat oven to 350 degrees. Melt butter in a large casserole. Saute onions

  15. 2 minutes over medium heat. Add mushrooms and saute

  16. 5-7 minutes more. Add

  17. barley. Cook until lightly browned. Add 2 cups of broth, salt and pepper.

  18. 45 minutes. Add remaining

  19. cup of broth. Return to oven and bake 30 minutes more. Garnish with chopped

  20. parsley.
