  1. 1/2 cup water

  2. 1 can (14 1/2 ounces) diced tomatoes, undrained (I like the fire-roasted!)

  3. 1 clove garlic, minced

  4. 1 package (9 ounces) refrigerated cheese ravioli

  5. 1/2 teaspoon dried basil

  6. 1/2 teaspoon dried oregano

  7. 1/4 teaspoon granulated sugar

  8. 1/8 teaspoon crushed red pepper flakes

  9. 2 cups chopped or torn fresh spinach leaves

  10. 2 Tablespoons grated Parmesan

  1. In a medium saucepan, combine the water, tomatoes, and garlic; bring to a boil. Stir in the ravioli, basil, oregano, sugar, and red pepper flakes. Reduce heat and simmer for 5 minutes, stirring occasionally.

  2. Stir in spinach and cook for 2 minutes. Remove pan from heat; cover and set aside to stand for 5 minutes. Sprinkle each serving with 1 Tablespoon of Parmesan. Serves 2.
