  1. 200 g pasta shapes

  2. 175 g frozen peas

  3. 15 ml olive oil

  4. 450 g courgettes, thickly sliced bunch of spring onions, washed and chopped

  5. 350 ml cheese sauce sea salt and black pepper

  6. 40 g fresh breadcrumbs (preferably wholemeal)

  7. 40 g Cheddar cheese, grated

  8. 25 g sunflower seeds, toasted

  1. Cook the pasta. Add the peas for the final 3 minutes. Meanwhile, heat the oil, and gently fry the courgettes and spring onions for 5 minutes. Drain the pasta and peas and transfer to a serving dish. Stir in the courgettes and spring onions, cheese sauce and seasoning. Mix together the breadcrumbs, cheese and sunflower seeds, sprinkle over the pasta and cook at 200°C/400°F for 20 minutes. Serve immediately.
