  1. Cheese and Mushroom Manicotti

  2. 2 cups shredded Mozzarella cheese

  3. 2 cups shredded Cheddar cheese

  4. 1/4 pound mushrooms, coarsely chopped

  5. 1 can 2 1/4 oz.

  6. 1/4 cup chopped onion

  7. 1/4 cup chopped celery

  8. 1/2 cup soft bread crumbs

  9. 1 egg, lightly beaten

  10. 1/4 cup milk

  11. 2 tablespoons chopped parsley

  12. 1/4 teaspoon pepper

  13. 4 cups prepared spaghetti sauce

  14. 1 cup water

  15. 8 unfilled manicotti shells

  16. Grated Parmesan cheese

  17. In a large bowl, combine 1 cup of the Mozzarella with Cheddar

  18. cheese, mushrooms, olives, onion, celery, crumbs, egg, milk, parsley,

  19. and pepper; set aside. Combine spaghetti sauce and water; pour half

  20. 3-quart casserole or 9 x 13-inch baking

  21. dish. Stuff manicotti shells with cheese mixture and arrange side

  22. by side in sauce. Pour remaining sauce over top. Bake, covered,

  23. 375 degree oven for about 1 hour. Remove cover, sprinkle with

  24. remaining Mozzarella cheese, and return to oven, uncovered, for about 10 more minutes or until cheese is melted. Pass Parmesan

  25. cheese at the table.
