  1. 1 Egg

  2. 1 cup 237ml Milk

  3. 2 tablespoons 30ml Vegetable oil

  4. 1 cup 62g / 2 1/5oz All-purpose flour

  5. 1 teaspoon 5ml Baking powder

  6. 1/2 teaspoon 2 1/2ml Baking soda

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 1/4 cup 40g / 1.4oz Brown sugar - (packed)

  9. 1/2 cup 31g / 1.1oz Quick-cooking oats - uncooked

  1. Beat egg; add milk and oil, mixing well.

  2. Combine flour and next 4 ingredients; add to egg mixture, mixing until blended. Stir oats into batter.

  3. Heat a lightly greased griddle or skillet over medium heat (375 degrees). Griddle is ready when a few drops of water bubble and skitter rapidly around.

  4. For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until surface is covered with bubbles and appear dry around the edges. Turn and cook other side until golden brown.

  5. This recipe yields about 10 (4-inch) pancakes.
