  2. 1 quart tamarinds

  3. 1 1/2 cups water

  4. Granulated sugar, heated

  1. Simmer tamarinds in water until soft.

  2. Put through a sieve to remove fibers and seeds.

  3. Measure, then heat the pulp.

  4. For each cup of pulp add 1 cup of heated sugar.

  5. Simmer, stirring constantly, until the mixture thickens.

  6. Put mixture into sterilized glass jars, then seal with paraffin.
