  1. 2 cups 474ml Baking potatoes - (1 3/4 lbs) (large)

  2. 1 cup 237ml Sweet potato - (3/4 lb) (large)

  3. 2 Eggs - (to 3)

  4. 1 1/2 cups 355ml Whipping cream

  5. 1 tablespoon 15ml Minced garlic

  6. 1 tablespoon 15ml Shallot - minced (large)

  7. 1 1/2 cups 219g / 7.7oz Grated Cheddar cheese - (6 oz)

  8. Salt - to taste

  9. Freshly-ground black pepper - to taste

  1. Peel the baking and sweet potatoes and slice them 1/8 inch thick. Combine the eggs, whipping cream, garlic and shallot and blend well.

  2. Heat the oven to 300 degrees. In a 13- by 9-inch baking dish, arrange 1 layer of sliced baking potatoes, then sprinkle them with some of the cheese and season to taste with salt and pepper. Top them with a layer of sweet potatoes, then more cheese, salt and pepper. Keep alternating layers until all potatoes are used, ending with a layer of cheese.

  3. Pour the cream mixture over the top and cover the pan with foil. Bake for 2 hours. Remove the foil and bake until the potatoes are golden brown, another 40 minutes.

  4. This recipe yields 8 servings.
