  1. Carrot-Mushroom Loaf

  2. 4 to 6 servings.

  3. 1 cup chopped onion

  4. 4 1/2 cups grated carrots

  5. 1 lb. chopped mushrooms

  6. 5 eggs

  7. 2 cloves garlic

  8. 1 cup fresh, wholewheat breadcrumbs

  9. 1 cup grated cheddar cheese

  10. 1/4 cup butter

  11. salt

  12. pepper

  13. basil

  14. thyme

  15. Crush garlic into melting butter. Add onions and mushrooms and saute until soft. Combine all ingredients (saving half the breadcrumbs

  16. and cheese for the top). Season to taste. Spread into buttered

  17. oblong baking pan. Sprinkle with remaining cheese and breadcrumbs.

  18. 350 F. for 30 minutes covered, then

  19. uncovered, or until browned.
