  1. 1 cup rice One 10-ounce package frozen spinach

  2. 3/4 lb. lean ground beef Salt and pepper Two 14-1/2-ounce cans Italian-style stewed tomatoes Grated Parmesan cheese

  1. Cook the rice in 2 1/2 cups water. Take the spinach out of the freezer to thaw. Brown the beef in a large skillet 5 minutes, stirring often, until it is well browned and crumbly. Drain off the fat, season the beef with salt and pepper and stir in the tomatoes and spinach. Simmer over medium heat 4 to 5 minutes. Stir in the drained rice and cheese. Makes 4 servings.
