  1. 2 cups diced cooked potato es

  2. 2 cups white sauce , below

  3. salt and pepper

  4. shredded mild Cheddar or Swiss cheese

  5. buttered bread crumbs White Sauce

  6. 4 tablespoons butter

  7. 4 tablespoons flour

  8. 2 cups milk

  9. salt

  10. white or black pepper

  1. Combine potatoes, white sauce, salt, and pepper. Pour into a greased shallow baking dish. Sprinkle shredded cheese over potatoes the top with buttered bread crumbs. Cook at 425° for about 20 minutes, or until nicely browned.

  2. White Sauce Preparation Melt butter in a saucepan over low heat; stir in flour. Cook for 3 minutes, but do not brown. Stir in milk and continue cooking over low heat, stirring constantly,until sauce begins to thicken. Season with salt and pepper.

  3. Add a tablespoon or two of heavy cream for a richer sauce. (I use 1 cup half and half & 1 cup milk in my recipe and Cheddar cheese...lots of grated cheddar cheese).
