  1. Kiwifruit Jam

  2. 1 kg kiwifruit

  3. grated zest of 1 lemon

  4. juice of 3 lemons

  5. 3 c sugar

  6. 1 c water

  7. Peel the kiwifruit and chop roughly. Place into a saucepan with

  8. the juice and zest and water. Boil until the fruit is soft and pulp-like. Stir in the sugar until dissolved and boil without

  9. stirring until setting point. Bottle.

  10. 2 tablespoons of crystallised ginger may be added when the sugar

  11. is added.
