  1. 8-12 brussel sprouts, halved

  2. 1/4 of a red cabbage, chopped

  3. 2 stalks red kale, chopped

  4. 1 medium zucchini, chopped

  5. 1 medium sweet onion

  6. 4-5 cloves garlic, minced

  7. 1 teaspoon of expeller pressed virgin coconut oil

  8. 1 tablespoon umeboshi vinegar

  9. salt & freshly ground black pepper, as needed

  10. tiny tiny pinch of cayenne pepper - this stuff is potent… literally 1 millimeter of this stuff can put your mouth on fire! So proceed with caution

  11. Optional: organic udon noodles (used here) or brown rice as starch

  12. Optional: can also add any mixture of sauces or dressings, but I prefer the taste of the veggies by themselves

  1. …no, I’m not alluding to any sports teams in the title, haha. This recipe is literally made up of these two colors – green and purple – so I thought it would be an appropriate title On a side note, any sports enthusiasts are welcome to bring to my attention any sports teams with those colors, haha. If the color combination hasn’t been claimed yet, I’m claiming it first! Today, I spent a total of three hours trying to make the world’s best vegan burger from scratch. The end result was pretty good, but it definitely needs improvement … specifically in the area of cohesion, haha. It didn’t hold together very well when it was placed on the bun. It looked great for the picture though! Anyway I’ll be sharing the recipe later this week Yup loove coleslaw (with green cabbage) … but you gotta try the red kale and red cabbage … they’re awesome in this dish Yes I grew to love them too I discovered that when they’re fresh, they’re not bitter. This was definitely delicious!! I think it’ll become one of my staples now…
