  1. 1 tablespoon peanut oil

  2. 1 large onion -- sliced

  3. 1 clove garlic -- finely chopped

  4. 1 cup butternut squash -- diced

  5. 1/4 cup raisins

  6. 1 cup chicken broth

  7. 1 teaspoon ground turmeric

  8. 1 teaspoon ground cinnamon

  9. 1/2 teaspoon ground ginger

  10. 1 can garbanzo beans -- rinsed and drained

  11. 2 cups hot cooked rice

  1. Preparation : Heat oil in 3-quart saucepan over medium heat. Cook onion and garlic in oil stirring frequently until tender. Stir in remaining ingredients except beans and rice. Heat to boiling; reduce heat. Cover and simmer about 8 minutes, stirring occasionally, until squash is tender. Stir in beans; heat through. Serve over rice.
