  1. Spicy Spinach

  2. 1-2 Tbsp oil

  3. 1-2 very ripe tomatoes, chopped

  4. 1 medium white onion, chopped fine

  5. 1-2 jalapeno peppers, chopped fine

  6. 1-2 bags prewashed spinach, rinsed again

  7. Heat oil in deep frying pan. Add tomato, onion and jalapeno and cook until the onion is translucent. Add the spinach, which should

  8. still have some water clinging to it from being rinsed. Cover the

  9. pan and allow the spinach to steam and wilt, stirring occasionally,

  10. about five minutes.

  11. Note: I found this in a Mexican Vegetarian cookbook as the filling

  12. for empanadas, and you can use it for that if you can refrain from

  13. eating it while you prepare the dough! It is also yummy on hot

  14. tortillas and you could add mozzarella or queso fresco.
