  1. 1/2 pound ground beef

  2. 1/4 cup chopped onion

  3. 1/4 cup chopped celery

  4. 3/4 cup beef broth

  5. 1 cup canned diced tomatoes, undrained

  6. 3/4 cup cubed peeled potato

  7. 1/4 cup thinly sliced carrot

  8. 2 tablespoons uncooked long grain rice

  9. 1/2 teaspoon salt, optional

  10. 1/8 teaspoon pepper

  1. In a large saucepan, cook the beef, onion and celery over medium heat until meat is no longer pink; drain. Stir in the broth, tomatoes, potato, carrot, rice, salt if desired and pepper. Bring to a boil. Reduce heat; cover and simmer 40-45 minutes or until rice and vegetables are tender. Yield: 2 servings.
