  2. 4 Quarts Ground Green Tomatoes

  3. 4 Quarts Ground Tart Apples

  4. 4 Cups White Sugar

  5. 2 1/4 Cups Light Brown Sugar

  6. 2 1/4 Cups Dark Brown Sugar

  7. 6 Cups Raisins -- Grind Half only

  8. 1 Pound Butter or 80% Fat Margarine

  9. 1 Lb. Lean Ground Venison or Beef

  10. 1 Cup Vinegar

  11. 2 Tbsp. Ground Clove

  12. 2 Tbsp. Cinnamon

  13. 1 Tbsp. Salt

  14. 1 Tbsp. Allspice

  1. Cover ground tomatoes with hot water bring to a rolling boil; Drain verywell. Mix all ingredients together and simmer until mixture turns dark.

  2. Ladle simmering mincemeat into Hot canning jars, seal and process 10 minuetsin boiling water bath after the water comes back to a boil.

  3. PAN SIZE: 20 Qt. Stock PotThis is a very tried and true mincemeat. I have been making it for 30 yearsand it comes out the same every time. It makes a deep rich flavoredmincemeat that is wonderful in pies or cookies or anything else you use itin. Use a course blade to grind with.
