  1. 2 cups cooked brown rice

  2. 8 spring onion s, finely chopped

  3. 1 red capsicum, diced

  4. 3/4 cup currant s

  5. 1/2 packet roasted cashew s

  6. 2 Tbsp sunflower seed s

  7. 2 Tbsp parsley Dressing

  8. 3/4 cup sunflower oil

  9. 2-3 Tbsp soy sauce

  10. 2 Tbsp lemon juice

  11. 1 clove garlic, crushed

  1. Mix rice, spring onions, capsicum, currants, cashews, sunflower seeds and parsley together. Shake all dressing ingredients together in a jar. Add and gently stir through just before serving.
