  1. Fiesta Potato Salad

  2. 8 to 10 3 pounds new red potatoes

  3. 1/3 cup chopped green onion

  4. 1 1/2 cups frozen peas

  5. 1 1/2 cups canned whole kernel corn, drained

  6. 1/2 cup red peppers, chopped

  7. 1 cup mayonnaise

  8. 4 teaspoons white vinegar

  9. Salt and pepper to taste

  10. Cut the potatoes into large chunks and boil them in salted water

  11. until they are almost tender, not soft. (Its not necessary to peel

  12. the potatoes.) Drain the potatoes and let them cool. Cut them into smaller-sized chunks or slices if necessary. Add green onions,

  13. frozen peas, canned corn, red peppers and toss. Mix the mayonnaise

  14. and vinegar together. Stir the dressing into the vegetables. Salt

  15. and pepper to taste. Refrigerate for several hours or overnight.
