  5. 1/4 Pound Shredded Cheese*

  7. 1/2 Cup green onions

  8. 2 Egg whites

  9. 1 Tablespoon baking powder

  10. 1 1/2 Cups cooked brown rice

  1. Preheat oven to 425 F.

  2. In medium mixing bowl combine flour, cheese, green onions, and bakingpowder;

  3. set aside.

  4. Using a wire whisk, in separate bowl combine milk and oil; add eggs and beatuntil combined. Stir into flour mixture; fold in rice (mixture will belumpy;

  5. do not beat or overmix).

  6. Bake for 15 minutes or until a toothpick inserted in the center comes outdry.

  7. These delicious muffins are especially good with soups and stews!
